Summary

We are looking for a talented, enthusiastic and experienced Sous Chef to join this prestigous independent school in the centre of Old Portsmouth feeding up to 1600 pupils aged from two to eighteen.

You must have a passion and  enthusiasm for producing healthy and nutritious meals for our discerning students and knowledgable client.

There is an extensive hospitality dairy at this prestigious site and experience of banquet dining would be an advantage.

Main Responsibilities

  • Assist the Head Chef in the day to day running of the kitchen, including the preparation of all foods, stock taking and looking after HACCAP.
  • Ready to take control of the kitchen in the absence of the Head Chef
  • Ensure that legal and company requirements are adhered to in respect of Hygiene, Health & Safety, Employment Law, and Food Safety Law for all staff, visitors and customers.
  • Present all dishes to the highest standard in terms of colour, content, balance, freshness and flavour.
  • To assist in costing of  all menus in accordance with the budgetand  record daily wastage.

Ideal Candidate

  • A desire and passion to cook with fresh quality ingredients sourced where possible  from local suppliers.
  • Superb culinary skills and is willing to always push culinary boundaries.
  • Ideally have worked in an education environment but not essential.
  • Has experience of leading a small kitchen brigade.
  • Able to work on your own and be a great team player
  • A ‘Can do’ attitude is essentail for this  challenging role.

 

Position

This position is Monday – Friday with minimal weekend work, 40 hours per week for 41 weeks per year (term time only).
